Slow Cooker Chicken Cacciatore

Serves 4

1 Pound skinless boneless chicken thighs, trimmed and cut into 1” pieces
1 (141/2 ounce) can crushed fire-roasted tomatoes
1 cup sliced mushrooms
1 green bell pepper, sliced
1 onion, chopped
1 garlic clove, minced
1/4 cup dry red wine or reduced sodium chicken broth
1 tablespoon tomato paste
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon black pepper

Place all of the ingredients in a 5 or 6 quart slow cooker.
Cover and cook until the vegetables are tender, 5-6 hours on high or 6-8 hours on low.
